I was looking for a new recipe to try for my breakfast/pre-workout meal that would fit with my new meal plan and came up with these:
CARROT CAKE PANCAKES!
•1 cup shredded carrots
•1/4 cup oats
•cinnamon, nutmeg, ginger powder (to taste
•1tsp cashew butter (not pictured)
1. Place all the ingredients in blender and blend together.
2. Cook batter like pancakes, and done!
3. While still hot, top with tsp of cashew butter. Ta-dah!
They are not super sweet (the only thing sweetening them is 1/2 a banana), but depending on you and your nutrition needs, you can add some pure maple syrup on top, along with the cashew butter.
