Anyone who knows my husband, knows that Rob LOVES ice cream!
When I first arrived in the USA in 2006 I was also completely entranced by the sheer number of flavor combinations available…which sadly lead to me trying pretty much all of them out and gaining some ice cream chub!
When Rob and I started our health and fitness journey 18 months ago we knew curbing our sweet cravings were going to be the hardest part. It’s not that you have to give it up completely, you can still indulge every once in a while, but a sweet “treat” is not a treat when you have it every single night (and sometimes afternoons as well!)
Well, this lead to me trying to find healthy options for many of our favorites (cookie dough bites, banana bread muffins, brownies, pumpkin spice muffins, pancakes, and the list goes on…). This ice cream recipe is just another one of our favorites and regular go-to’s.
There are so many ways you can dress this up differently. Here are a few extra options:
- at 1 tsp mint extract for mint chip ice cream
- replace the chocolate chips with walnuts (or keep the choc-chips and just add some walnuts for extra crunch)
- Add a Tablespoon or 2 of peanut butter for a Reese’s peanut butter cup flavor ice cream
- Replace the chocolate chips with anything that you would enjoy (shredded coconut, frozen blueberries, graham crackers, granola etc)
