I went to see my acupuncturist on Friday morning (best way to start a Friday morning, by the way!) and she recommended I eat lots of hearty soups and stews – it would do my heart good, she said.
She shared a great beef and barley stew recipe with me, and it is DELICIOUS, so I thought I would share with all of you!
2 sweet onions, diced
2 cloves garlic, minced
2 lbs grass-fed beef cubes
1.5 liters organic beef broth (preferably homemade)
3/4 cup uncooked barley
4 organic carrots, chopped
4 stalks organic celery, chopped
Crushed Red Pepper
Pinch of himalayan salt if needed
Brown the onions and garlic in pot. Add the beef cubes and cook until lightly browned.
Add the broth, barley, and chopped vegetables, and season with herbs and crushed red pepper.
Bring to a boil and then cover and turn heat on low. Allow the stew to cook for another few hours, stir on occasion.
Serve hot and ENJOY!
