These quick and easy pancakes are not only “Fix Approved” but are also delicious and pretty filling. I have only made them a handful of times so far, but I am thinking of adding in some extra goodies into the batter next time (I’m thinking a few chocolate chips wouldn’t hurt…)
Makes 3 pancakes, so double or triple the recipe as needed!
- 2 eggs
- 1/3 cup oats
- 1/2 a banana
- 1 tsp. vanilla extract
- Blend all the ingredients together.
- If you are adding any extras (see update below), add them after you have done the initial blending.
- Cook the pancakes over medium-high heat
- Top with anything that you’d enjoy and serve hot!
Quick, easy, and super tasty!
We eat these pancakes almost every Sunday morning. Some of our favorite things to add in are: peanut butter, walnuts, pecans, chocolate chips, blueberries, cinnamon, and pumpkin pie spice (sometimes more than one option at a time).
We also love to top them with a little pure maple syrup, fresh berries, and of course almond or peanut butter (as pictured).
