Sweet potatoes are one of the healthiest foods known, and are ranked as the top nutritional vegetable by the Center for Science in the Public Interest. They are rich in beta-carotene, and provide you with powerful antioxidants, helping to fight against cellular damage.
What you will need:
- Sweet Potatoes (Jewel or Garnet Yams)
- 1 Tbsp. Coconut Oil
- Sea Salt or Himalayan Salt
- Garlic powder
- Onion powder
- Black pepper
- Dried herbs: oregano, thyme, rosemary, parsley (any others you wish to add)
Wash potatoes (leaving skins on*) and chop into bite sized cubes.
Spread coconut oil evenly across a baking sheet. Place cubed potatoes on the baking sheet and add the salt, pepper, garlic powder, onion powder and herbs to taste.
Bake at 400°F for 40 minutes, or until potatoes are lightly browned on the outside and tender on the inside.
We love these as a side dish (with lunch or dinner), or as a healthy snack whenever we get a little hungry. They taste great at room temperature, so you can pack some in a small container and take then to work to snack on during the day!
