Rosemary & Goat Cheese Savory Muffins

Makes 12 muffins

  • 3 cups grated cauliflower
  • 3/4 cup goat cheese
  • 3 eggs, beaten
  • 1/4 cup finely chopped fresh rosemary
  • 2 cloves crushed fresh garlic
  • 1 Tbsp olive oil
  • 1/2 tsp baking powder
  • 1/4 cup coconut flour
  • 1/2 tsp salt (to taste)
  • pepper & thyme to taste


Pre-heat oven to 350°F and grease 12-hole muffin tray.
Mix all the ingredients together in a bowl. Once well combined spoon the batter into the muffin tray.
Bake for 30 minutes. Turn off the oven and let the muffins rest for another hour to firm up.

TIP: My batch got pretty stuck to the bottom of the muffin tray, so I would recommend using cupcake liners for each muffin.
